AUTHENTIC FARM-TO- TABLE

Our culinary approach is rooted deeply in the rhythms of the land. Here, eating a diverse, healthy, and seasonally vibrant diet comes naturally. Our cuisine emphasizes a plant-rich menu, beautifully complemented by pasture-raised meats, resulting in meals that are simultaneously simple, elegant, and nourishing. By thoughtfully incorporating raw, fermented, and fresh vegetables, we curate balanced dishes that promote optimal health and celebrate the inherent beauty of each ingredient.

Our cuisine embodies the concept of terroir—the unique taste shaped by soil, climate, landscape, and culture. Within a mile radius, our partnership with neighboring farms provides us unparalleled access to the freshest and richest ingredients: succulent mangalitsa pork, 100% grass-fed beef, dry-cured salumi, organic chickens, heirloom dry corn polenta, and an abundance of seasonal vegetables prepared fresh, raw, roasted, preserved, and fermented.

Restaurants that are open 5-7 days a week do not typically stock their kitchens with a primarily local and all organic pantry. Because we are not a restaurant and only open for service a few times a week through the growing seasons, it allows us to be true to our ideals of sourcing  exclusively organic and responsibly farmed food, from our Feast & Field farmers and other Vermont farms. What we can’t source directly from this land base, we source as locally as possible. The price at which we offer our prepared foods and wines is an honest and true reflection of a delicate balance between what's fair for the consumers and sustainable for the producers.

The art and science of winemaking and food begins with the seed - within the rich genetic tapestry of life  expressed across the  many varieties of apples, grapes, berries and herbs growing on our farm.  But surely it doesn’t stop there, as every element found in Nature is profoundly interconnected. From Mother Earth’s pollinators to the minerals and microbes in her soils, to the cycles of sun, moon and beyond, no stone goes unturned in the Grand Mystery of life and death. Our role as farmers is to walk in right relationship with these Earth allies, stewarding the health and fertility of the soil within which our trees, shrubs and vines root. Our intention is to contribute to the ecological diversity of life in our garden environs while maintaining an arc of growth and conscious evolution to become better stewards day after day, year after year.  Our choice to re-connect the farm with the factory is central to our ability to be good stewards on the land. We grow and celebrate the genetic expression of varieties that are appropriate to our climate, which contribute to the local character of our product.
